That little dial makes a huge difference — I set it to 175 for green tea and 200 for oolong, and it hits the mark every time without me guessing. The pour spout is narrow enough that I'm not splashing water all over the counter anymore.
The variable temp dial actually goes down to 135°F, which is perfect for my white tea that used to turn bitter every time. Now I just set it and forget it, no more guessing or waiting for the boil to cool.
I've been drinking green tea wrong for years — 175°F makes a shocking difference, no more bitterness. The dial is satisfyingly clicky and it hits the exact temp in about a minute. My morning cup finally tastes like the tea shop's.
